• 2.5 cups cherry tomatoes, halved

• 8 oz fresh mozzarella cheese balls, cut in half

• 1 jar (about 3/4 cup) kalamata olives, sliced

• 1/2 red bell pepper & 1 green bell pepper, diced

• 1/2 chopped red onion

Homemade Dressing:

• 1/2 cup extra virgin olive oil

• 1/4 cup red wine vinegar

• 1 tsp Dijon mustard

• 1 tsp chicken bouillon diluted in 1/4 cup water

• Pinch of salt

• 1/2 tablespoon sugar

• 2 garlic cloves

• Fresh cracked black pepper

• Handful of fresh herbs (basil, oregano, parsley, and chives)

For topping:

• Grated parmesan cheese

• Chopped parsley
