Creamy San Marzano Sausage Spaghetti (4 servings)
Ingredients
- 1 lb Alto Imports Bronze Cut Spaghetti
- 1 lb Locals’ Market Hot Italian Sausage
- 3 tbsp Olio Nobile Olive Oil
- 5 tbsp salted butter, divided (3 + 2)
- 1 medium onion, diced
- 5 cloves garlic, minced
- 1 (28 oz) can whole Valgri DOP San Marzano tomatoes (with juice)
- 1 cup Apple Valley Heavy Cream
- 1 cup finely grated parmesan (plus more for serving)
- 1 tsp kosher salt (plus more to taste)
- 1 tsp black pepper
- 1 tsp sugar (optional)
- 2 tbsp Italian seasoning
- 1 tbsp lemon juice (optional)
- Reserve ½ cup pasta water
Method
- Bring a large pot of heavily salted water to a boil. Cook spaghetti until 1 minute shy of al dente. Reserve ½ cup pasta water, then drain.
- In a large skillet over medium heat, add olive oil and brown the Italian sausage, breaking it into crumbles. Cook until fully browned. Remove to a bowl, leaving drippings in the pan.
- Add 3 tbsp butter and the diced onion to the same pan. Cook 6–7 minutes until soft. Add garlic and black pepper; cook 1 minute.
- Stir in Italian seasoning, salt, and optional sugar. Add the whole Valgri DOP San Marzano tomatoes with their juice. Break them up with a spoon and simmer 10–12 minutes until slightly thickened.
- Reduce heat to low. Stir in heavy cream. Add parmesan in 2–3 additions until melted. Stir in remaining 2 tbsp butter for a glossy finish.
- Return sausage to the sauce. Add drained spaghetti and ¼–½ cup reserved pasta water. Toss 1–2 minutes until the sauce coats the pasta.
- Taste and adjust salt if needed. Optional: stir in lemon juice at the end. Serve with extra parmesan and black pepper.
