½ lb ground bulk sausage (find it fresh at Locals’ Market!)

12 oz (about 1¾ cups) diced butternut squash (fresh or frozen)

2 cups chopped Lacinato kale (or baby spinach as a quick swap)

12 large eggs

½ tsp red pepper flakes

½ tsp kosher salt

½ tsp cracked black pepper

¼ tsp dried thyme
-
¾ cup whole milk ricotta cheese
How to Make It
1. Preheat the Oven
Set your oven to 375°F and grab a cast-iron skillet (or any oven-safe pan).
2. Brown the Sausage
Cook the sausage over medium-high heat until mostly browned, then reduce the heat slightly.
3. Add the Veggies
Toss in your diced butternut squash and cook a few minutes until lightly browned. Add kale or spinach and sauté until wilted.
4. Mix the Eggs
In a bowl, whisk together eggs, red pepper flakes, salt, black pepper, and thyme.
5. Combine & Bake
Pour the egg mixture evenly over the sausage and veggies in the skillet. Dollop ricotta across the top for creamy pockets of flavor.
