1 lb ground beef

1 lb pork sausage or ground pork

½ onion, diced

½ green pepper, diced

1 cup rolled oats

½ cup breadcrumbs

2 eggs

¼ cup Williamson Bros. BBQ sauce

1 tbsp Worcestershire sauce

1 tsp dried parsley

2 tsp salt

1 tsp garlic powder

½ tsp black pepper

⅔ lb Weaver’s Double Smoked Bacon (find at Locals’ Market!)

3–4 tbsp Historic BBQ Red seasoning

How to Make It
1. Fire Up the Smoker
Preheat your Traeger to 225°F. Let it smoke for about 5 minutes, then bring it up to temperature.
2. Mix It All Together
In a large bowl, combine ground beef, pork, onion, and green pepper. Mix by hand until evenly combined.
3. Add the Flavor
Stir in eggs, oats, breadcrumbs, BBQ sauce, Worcestershire, and seasonings. Mix thoroughly until the ingredients are well incorporated.
4. Shape & Wrap
Form the mixture into a loaf and place it in a slightly oversized pan (to catch extra grease). Lay bacon strips over the top, tucking ends under the loaf. Sprinkle with Historic BBQ Red seasoning.
5. Smoke Low & Slow
Place the pan on the Traeger and smoke for about 2 hours, until the internal temperature reaches 135°F.
6. Glaze & Finish
Carefully transfer the meatloaf to a grill pan or directly onto the grates. Brush generously with BBQ sauce and continue cooking for 30–60 minutes, or until it reaches 165°F internally.
7. Rest & Serve
Remove from the grill, tent with foil, and rest for 15 minutes before slicing. Serve warm with extra BBQ sauce (and maybe a side of mashed potatoes from Locals’ Market).
